It is a unique which has thickening agent which is not letting gel formation, even under extreme conditions (high sugar or salt content in the food), and is also used as the salad dressings, sauces, and fruit drinks. Over the food applications, lambda makes a gluey but pseudo plastic solution, or shear-thinning, under mechanical action. In liquids, such as dairy products (EU), syrups, beverages (EU), tomato sauce and salad dressings, lambda enables a full creamy texture.
